Are there any areas of the island that really come to life during the off-season?

Places like Santa Gertrudis and San Juan, in particular, take on a unique charm in the off-season, offering a more local and relaxed energy. Restaurants maintain a cozy atmosphere, and the pace slows down, revealing a more authentic side of Ibiza. Santa Gertrudis is perfect for starting the day with breakfast at Bar Costa, known for its legendary bocadillos. Later, enjoy an aperitif in the sun at one of the bars in the square near its emblematic church.

On Sundays, the San Juan market is a must-visit. Unlike summer, when it’s packed with tourists, winter brings a more laid-back vibe, making it a great spot to browse local crafts and organic products. End the day at Benirrás Beach, where at around 4 p.m., local hippies from the north of the island gather to play the drums, creating a nostalgic throwback to the Ibiza of the ’70s. Winter sunsets here are spectacular, with fewer crowds and an even more magical atmosphere.

How does the weather change the island at this time?

The climate is much milder than in the rest of Europe. In autumn and winter, the days are bright, and temperatures rarely drop below 12 degrees Celsius [about 54 degrees Fahrenheit]. The biggest advantage is that you can enjoy the island without the sweltering summer heat and without the crowds. This is the most authentic Ibiza.

How would you spend the perfect Saturday in Ibiza?

I’d start with a walk on the beach, either in Salinas or Playa d’en Bossa, depending on the direction of the wind. I love walking barefoot along the shore, enjoying the sea at this time of year. Then, I’d have a coffee at a local bar in my beloved San Jordi and visit my friend Toni at his stall in the Sant Jordi Hippodrome, a place that has become increasingly popular among locals during the winter. One of my favorite historic spots on the island are the 16th-century Walls of Dalt Vila, which during the off-season offer a peaceful atmosphere perfect for a leisurely stroll, taking in the stunning views and rich history of Ibiza. Finally, I’d end the day at home, by the fireplace, surrounded by my grandchildren and children.

Do you have a favorite activity during this time of year?

I really enjoy sailing between Ibiza and Formentera at this time of year, and I cherish gatherings with friends around a well-served table because, in Ibiza, gastronomy is always a reason for celebration.
